So I've seen this with other arches, if I use gnome-disks with the
"Restore" option from the menu it worked then. Might be worth trying
that too.
Normally, to be bootable on a mac, a CD-ROM must be hybrid.
This allows to have a file with a property 'tbxi', this is what the mac
firmware will load to boot the CD.
An hybrid CD-ROM has two filesystems on it: an ISO9660 filesystem using
2048 bytes block size and an HPF filesystem using 512 bytes block size,
only data are shared between filesystems (meta-data are not).
Filesystems can share the media because the root block is defined to not
be at the same offset for each filesystem.
An Hybrid CD-ROM is created with "mkisofs -hfs".

And of course an hybrid filesystem can be dd'ed to an USB key (the 512
bytes block size will be used, and thus HFS).
