According to func-inventory (yay!) I was running 'cobbler 0 1.2.5

noarch'
I've synced regularly over the past few days as we've been installing a
few systems.
I'm using serializers_yaml and can see the profile listed in
/var/lib/cobbler/profiles:
I can see the profiles in there.
Should I erase and re-install cobbler? b/c I don't think that I'll be
able to just do a rpm -Uvh if the versions are the same.
In that scenario, you can always do "rpm -Uvh --force" in between
versions. Though in this case, I don't know what that would achieve. If
you want to erase your config you can do so by just removing
/var/lib/cobbler/profiles and /var/lib/cobbler/systems.
Can you send me your configuration files off list? I can see if this is
reproducable on my end. It could be that we have a load order problem
with the subprofiles (each field has a "depth" in it that is there to
tell them in which order to be created in memory), though none of this
should have changed between 1.2.5 and 1.2.6.
Also see if there is anything interesting in /var/log/cobbler/cobbler.log ?
