You are correct. Group EAR/WAR deployment is not currently supported by
the GUI. It's something others have asked for though and that we'd like
to add in a future release.
Note, you might be able to write a CLI script to do group deployment.
Can someone else more familiar with the CLI comment if this is possible?

How are these things intended to work in "group" mode?
For example, I have grouped two JBoss AS instance. This means I am able to
change the DataSource configuration on the two machines at once.
However, the grouping function does not seem to work in the situation of
trying to use the inventory in order to deploy a new application: It does
not display the "Child Resources" panel, meaning I am also unable to add
new applications...
I suspect it could still be done by selecting a server specifically and
then using the inventory tab to deploy to all node via the farming
mechanism.
Still, to be honest, I wonder if something is not missing here.

You can deploy an EAR or WAR using RHQ by going to the
Inventory>Overview tab of the JBoss AS Server Resource that you want to
deploy it to, and then selecting Create New Child Resource under the
Child Resources section. For some screenshots see
