Hello Thomas,
Actually I looked in the ssl.conf but did not find any directives that
would make the Apache SSL virtual hosts look for the files in the
/etc/httpd/htdocs directory?
Is this some type of default for secured DocumentRoot directive?

I think you need to put your SSL virtual hosts in
/etc/httpd/conf.d/ssl.conf
