First of all, /etc/systemd/system/display-manager.service is not a file, but a
symbolic link.
I don't know exactly what you mean by "neither of which would boot
correctly". Are
you getting a login display? From looking at the sddm log it would seem you are
getting a login display and are trying to login.
This line suggests this....

But, if you have removed all the GNOME bits it won't be able to start a GNOME session
and would explain your getting a blank screen at that point.
Check to see if you have a /var/lib/sddm/state.conf file. If so, what are the contents.
