But have get to figure out how to get /dev/hda2 backed up without
picking up the other drives mounted on /
Of course, I am saving the backups on a different drive so that I can
use specific files I want to restore or refer to when rebuilding the new
f7 installation.

If you want a quick way to restore your current setup, take a look
at partimage.
http://www.partimage.org/Main_Page It is part of the
System Rescue CD.
http://www.sysresccd.org/Main_Page This give you
the advantage of backing up an unmounted file system.
If you want to use tar, take a look at the --one-file-system option.
