IIRC (it was a while back) I just moved /var/cache to a different
filesystem using "cp -rp" and left a symbolic link behind. Worked fine.

You probably have a labeling issue. Check for error messages in
/var/log/audit/audit.log
ausearch -m avc -ts recent
Should show you the SELinux error messages.
