A bit of googling and experimentation suggests:
:help matchparen
is the Fine Manual to read. It looks like you can turn them off on a
monochrome terminal but keep them on when colour is available.

It seems like it wasn't intentional for this to make it into the vim
release.
I did Google the problem before making the post, but I was searching for
matching brackets, not parens.
