That would be very odd.
It would be saying you have only one kernel installed but the kernel you're running
isn't listed.
I don't know if you're running secure boot, or if that would make any difference.
But what is
the output of
sudo grub2-editenv list
As well as....
sudo ls /boot/loader/entries/
