suggestions.
- Single files, E-Mails -> GPG (you might refer to it as PGP)
- Directories -> fuse + encfs
- Partitions, file systems -> cryptsetup (possibly with luks)

I would recommend cryptsetup+luks. It's convenient, and efficient. You can use a loopback device or any drive you have lying around. Make sure you allocate enough space, though, or you have to reencrypt a new partition and move everything over.
