Read the rpmbuild manpage for many other wonderful things, such as -bb using a spec file (in the SPECS directory, of course) to create a new rpm and srpm after modifying stuff in SOURCES.
One added point - with the exception of "yum install rpmdevtools", you can do all this as a normal user. Then you just need to do the install of the finished RPM as root.
