that I can't help you with this particular problem. (I'm using XFCE/dwm) But maybe you could use the gnome-fallback mode.
Maybe there's a desktop that isn't so deficient?
Or maybe you want to try another desktop environment like Mate or Cinnamon. They look quite like Windows and I think your father-in-law can work with them without any big help from you. XFCE could also be a choice. Adding shortcuts to the desktop is quite easy.
