I am right now doing a F21 install using the server netinst:

You can choose any workstation gui during the install. Though labeled: Server, it is really for ALL of the installs once you get into it.
I have a local repo of the os which is important, or a very fast internet connection.
What's the score of $ du -hs "local repo"

And with all of my repo archives, my 1Tb drive is almost full. What to do with all those old versions...
