Havoc,
This would be ideal of course, but it would take a bit of work. The
icons are specified in configuration files in OOo and are _not_
dynamically found in any way. A good amount of surgery would be
required to get them to see the
freedesktop.org ones. Perhaps a better
solution would be to an Icon Set Framework allowing arbitrary
collections of icons to be used, along with a UI for changing the set or
setting it to the "System Default", taken from the current theme. This
too would take yet more surgery.

There's a
freedesktop.org spec for icon themes, so the ideal course of
action is simply to make
OO.org read the current icon theme, rather than
trying to pick some hardcoded set. The icon theme spec is not 100%
trivial to implement so the simplest way to do so may be to use the
implementation in upcoming GTK+ 2.4.
If we pick a hardcoded set, it should be the Bluecurve icon style;
Garrett can fill in missing icons in the Fedora Core 2 timeframe
probably.
