I wonder whether it would be possible to make them somehow to do so?
For Evolution, when you setup a mail account, you need to specify the
mail source (imap, pop3, local delivery, or mbox spool). I have not
used them, but presumably one of those last two is what you want in
order to read /var/spool/mail/root.
