Same hang when I boot from the Server install DVD.

How do I get to shell once it hangs? Or do I do this from the startup menu,
pressing 'e' and then whatever it says to enter a command?
control-alt-f2 I think will do it; depends on the install media
whether you get a prompt or some other process showing logs, so try f2
and if you don't have a prompt try f3, then f4, etc.

Yes. Insert USB then:
lsblk to find out what /dev/sdXY is
mount /dev/sdXY /mnt
cp dmesg /mnt/
umount /mnt
Or if you have working network while using the install media:
scp dmesg.txt user@IP:/path/to/where/you/want/file/
