the yum shell code was written explicitly for this purpose.
Or you can just do:
$ yum -y upgrade [*]
$ <error happens and it tells you what the problem is>
$ yum -y upgrade --exclude="packagename"
etc etc etc
Which is usually what I do because I'm too lazy to type stuff like
"transaction solve" and "transaction reset" and "run".
* upgrade is better than update! long live upgrade!
