Sure, that’s fine!
I usually make things the user would type into the terminal bold, so I had
“angular”, “atom”, and so on in bold but the curly braces (as the possible
option values) and commas and curly braces (not part of the option value)
plain/Roman. However, there are few firm conventions in man page formatting,
and I think the simpler formatting you suggest is still quite clear.
You can always check a man page with
man ./git-changelog.1
to see how it looks.
