The preferences applet is still there - it's in the "Other" category in
the
applications menu, "Remote Desktop" (or just start typing "remote" in
the menu
view).

The integrated gnome stuff uses the vino server.

I am assuming your talking about Gnome3, since there is no:
System->Preferences->Internet and Network->Remote Desktop
option on Gnome2.
