Gnome must learn how to use the new X, and the Gnome applications use
Gnome, they don't use X directly?

More or less.  GTK and Clutter abstracts away the differences between X and Wayland for the most part. Very few things like Window Managers and Screenshot apps needs porting over and all apps must be tested with Wayland explicitly to make sure it works ok.
