A hostname field would be nice, I don't have issues setting one after the
fact though.

There is, but it's non-obvious. You have to set it in GNOME Settings
before running the installer. I've complained about this in the past
as well.

Or use FreeIPA/Active Directory to manage users and enroll as a client
instead. This is generally a better idea than manually copying IDs
around every time you deploy a new machine.
