You should not normally have to manually untag anything. ;)
What are you trying to do?
Normally builds get tagged into something based on the target you built
them for, then for rawhide they just go out in the next days compose,
and for other stable branches, bodhi takes care of adding/removing the
needed tags as they go to pending, testing and stable updates.
If you just don't want to have the build be an update, just don't do
anything and after a few weeks they will get untagged by the koji
garbage collector, then a few weeks after that they will get tagged
into the trash and removed.
You should also never untag a rawhide build if it's gone out in a
compose.
