I can commit to an hour no problem but, is this going to be similar to
one of the GNOME Bug Day type events as Sankarshan proposed, or is it
more like "office hours" for each mentor? I kind of like the 'Day'

What about both? Office hours for each mentor, and commitment to a
certain number of "Mentor Day" events as well?
People might not be able to commit to being around for a whole day -- but
one hour, every week, like clockwork, seems like something that *everyone*
should be able to commit to.
