If I have a rule with a LOG argument, in what file can I see the logs of connections that match that rule? (In case it makes a difference, I'm using firewalld 0.4.4.4 on RHEL 7.)

As indicated by iptables-extensions(8) man page, they will be printed to the kernel log which you can viewed with dmesg(1). It may also be in syslog (/var/log/messages).
