So, it lists one gnome-extension called easyscreencast, which I've had success with...on X, but the page says that it should work with wayland (which makes sense, since it's being run with some of the compositor's credentials).
That aside, have you tried opening a terminal and running

journalctl -f

and then trying to use the built-in GS recording method to see what errors pop-up?
If you aren't getting any errors, and it's still not recording, verify that the keybinding is still in place

gsettings get org.gnome.settings-daemon.plugins.media-keys screencast
