Couple things to clarify:
- Fedora CoreOS is meant for running on servers where it's the only
OS, so it was never designed with dual booting in mind. You can
probably get away with having it on it's own drive, but this isn't
something that's supported or will be supported in the future. FCOS
also uses filesystem and partition labels, so if you have a filesystem
labeled `root` or `boot` you risk accidentally mounting the wrong one.
Dual booting is a "you're on your own, good luck" situation.
- The installer is basically dd'ing an image and injecting a config
in the boot partition. Every FCOS install starts out with the same
image (except the injected config). On first boot Ignition runs from
the initramfs and does the configuration. This is in contrast to how
arch/gentoo are installed where you do the configuration,
partitioning, etc manually from a chroot. The Ignition config can
however do things like partitioning, creating raid, and reformatting
partitions.
For your actual questions:
1) Yes and no. On FCOS all state is in /var. You can absolutely create
another partition for var and format it as btrfs. We don't support
reformatting the root itself though. We want to eventually but it's
not there yet.
2) If you want to put /var on it's own btrfs partition, you can create
a FCC to do that, run it through FCCT[1] and install with that
Ignition config. We actually have /var on a separate btrfs partition
as an example in the FCCT docs[2], just make sure you don't run into
conflicts with your other OS for things like filesystem labels.

I am working from an existing Linux host (archlinux) on which I installed
"coreos-installer" via cargo.
I have a device Btrfs formated, with a few subvolumes.
Now, the doc says I need to install on an unmounted device. My plan was to mount
subvolumes and then install the OS on the mounted partitions.
Can anyone tells me how to proceed? Maybe use the live ISO installer instead of
coreos-installer? Anyway to chroot the mounted device and then install Fedora coreos on it
(that would be the simplest)?
